This is the world’s easiest chocolate cake with just a few ingredients. First, prepare a 15cm baking mould by lining it with parchment paper then set it aside. Into a mixing bowl, add two eggs and beat the eggs with a whisk until the yolks are broken and the eggs are light. Add 40 grams of brown sugar and whisk it in, stirring well to try and dissolve the sugar into the eggs.
Place the bowl with the egg mixture over a pot with hot water and wait until the temperature reaches 37 degrees celcius then remove it from the hot water bath. Using an electric beater, beat the egg mixture on medium-high speed until it is light and has doubled in size. Sift 40 grams of cake flour and 20 grams of cocoa powder and fold it into the mixture with a spatula.
Do not use an electric mixer at this point because you don’t want to break the structure of the cake that was built after the first whipping. The folding of the cake with a spatula should be gentle, once you are done, add 20 grams of melted butter and fold it in until combined then pour the batter into the prepared cake pan.
Bake the cake in a 340F/170C preheated oven for 20 minutes. Once baked, remove the cake from the oven but do not remove the cake from its mould until it’s completely cooled down. Carefully take the cake out of its mould place it on a wire rack and flip it back over to sit upright. Take the bar of your favourite chocolate and place it on top of the cake.
Usually, a chocolate cake comes with frosting on it but a chocolate bar makes everything so much easier and better. After placing the chocolate bar over the cake, pop it into the oven for like 2 minutes and let the chocolate just start to melt and wrap around the cake. Slice the cake and taste how delicious it is.
