INGREDIENTS
For the dough:
100 g (3.5 oz) butter, softened
30 g (1 oz) sugar
2 tbsp sour cream
1 egg
300 g (10 oz) flour
2 tsp baking powder.
For the filling:
400 g (14 oz) cottage cheese
60 g (2 oz) sugar
2 tbsp cornstarch
1 egg
½ tsp vanilla powder
Egg wash
Powdered sugar.
METHOD
Preheat oven to 180C/350F.
Whisk sugar with sour cream and an egg. Add flour and baking powder into the mixture, then put in some softened butter and knead it with your hands until crumbly dough forms.
For the filling mix cottage cheese with sugar, cornstarch, an egg and vanilla until smooth.
Cut the dough into 8 pieces, roll each one out and cut into a circle. Use dough scraps to make 2 more pie circles.
Fill half of each circle with cottage cheese filling and fold the dough in half to cover it. Brush with egg wash and bake for 20-25 minutes, until golden.
