This no-mixer chocolate cake is the simplest chocolate cake recipe you need. It is topped with a silky moist chocolate ganache for more chocolate flavour. Into a mixing bowl, add one cup of all-purpose flour, 30 grams of cocoa powder, a quarter teaspoon of salt, half a teaspoon of baking powder and a quarter teaspoon of baking soda.
Stir the ingredients and set them aside. In another mixing bowl, add 2 eggs, 130 grams of sugar, a teaspoon of vanilla extract and 70 ml of vegetable oil. Whis the ingredients together until the eggs are broken and the sugar dissolved and you have a homogenous mixture. Sift in the prepared dry ingredients and start mixing everything together then add 80ml of hot water.
Continue mixing until you have a smooth chocolate cake batter with no lumps. Pour the batter into a round 18cm prepared cake pan, and tap the pan on the counter to remove trapped air bubbles. Bake the cake in a preheated 170C oven for 45 minutes or until a skewer inserted in the centre comes out clean. Free the cake from the pan once baked and place it onto a wire rack and let it cool completely.
For the ganache, add 170 grams of chocolate chunks in a microwave-safe bowl together with 200 ml of whipping cream. Place the bowl in a microwave for a minute at a time, removing it after every minute and stir the mixture until the chocolate is melted and combined with the cream and you have a smooth chocolate ganache. Set the ganache aside to cool then pour it over the cooled chocolate cake. Decorate the cake and serve.
